The watch that takes egg cooking seriously

Following the instant success of the first edition, MAT watches introduces the Egg Master II: a French automatic watch, powered by a Swiss movement and designed to master egg cooking... with horological precision and a healthy sense of humor.
Housed in the 39 mm Picobello steel case, the Egg Master II combines technical design, everyday comfort and a truly unique culinary complication. Thanks to its bidirectional bezel and color-coded timing scale, it allows users to perfectly time four classic egg preparations: poached, soft-boiled, medium-boiled and hard-boiled eggs.
Developed alongside chef Fabien Pairon every cooking duration has been carefully validated to create a functional tool for both food lovers and unconventional watch enthusiasts.
Powered by a decorated and customized Swiss Soprod M100 automatic movement, the Egg Master II comes with three interchangeable straps, a strap-changing tool and a recycled leather travel case.
This numbered limited edition will be available exclusively by subscription on merairterre.com starting June 9, 2026.

Egg Master II: when egg cooking time is serious business

So, for once, let’s keep it simple. The original Egg Master cleverly repurposed the regatta function of a sailing chronograph, transforming it into a culinary timepiece in collaboration with the Association for the Preservation of Egg Mayonnaise - ASOM. The affair was wrapped up in less time than it takes to cook a soft-boiled egg; the entire limited-edition collection sold out in the blink of an eye. It caused quite a stir, notably because it enabled ASOM’s experts to determine, in an entirely scientific manner, the universal cooking time for an egg mayonnaise: 8 minutes and 40 seconds. No legal challenge possible.

Fabien Pairon shares his recipe for poached eggs in red wine sauce (œuf en meurette)

Created with the help of the EGG MASTER II

Where haute cuisine meets high precision

To mark the launch of the new Egg Master II by MAT watches, Fabien Pairon (chef and head of Auberge Communale du Mont-sur-Lausanne in Switzerland, Meilleur Ouvrier de France, former instructor at the École Hôtelière de Lausanne, and World Champion of Œuf en Meurette) shares his vision of a craft where every detail matters.

Hailing from Burgundy, the birthplace of French gastronomy and the œuf en meurette, Fabien Pairon dedicates his cuisine to precision, the transmission of savoir-faire, and the mastery of the perfect gesture.

Time management, precision of movement, technical rigor, plating, final touches… To achieve the perfect cook, every second counts –and that requires a reliable, precise tool designed to accompany every motion.

Because in the kitchen, just as in watchmaking, a few seconds can change everything.

An encounter between two worlds driven by the exact same standard: the quest for precision.

How to use the Egg Master II?

The cooking times in our recipes are based on medium-sized eggs (53g/1.8oz), cooked at sea level (Alt. 0).

  • The bezel indicates the desired cooking level as well as the number of minutes required.
  • The inner ring indicates the number of seconds remaining.

Starting the cooking process

  1. Rotate the bezel to align your chosen cooking level with the current position of
    the minute hand.
  2. Wait for the second hand to reach the zero mark... and you're off!
  3. Cooking is complete once the minutes have elapsed and the second hand enters the matching colored zone on the inner ring.

A living symbol of retro-modernism

With its 316L stainless steel case, steel bezel with an aluminium insert and 39.5 mm diameter, the Egg Master II is subtly inspired by the automotive world and racing designs of the 1960s and 1970s.

Super-Luminova®

The indexes and hands are coated with Super-Luminova®, a luminescent material for optimal readability in the dark.

New complications

MAT watches returns to the kitchen following the expert advice of journalist and author Paul Miquel. They are joined by chef Fabien Pairon, head of the Auberge Communale du Mont-sur-Lausanne in Switzerland.
The idea? To design an Egg Master II that carries the unique spirit of its predecessor while offering new complications.

  1. Forget the quartz movement of the initial version. This second edition of the Egg Master must now be powered by a high-quality automatic movement.
  2. It must be housed in a Picobello case, the brand's latest collection, whose design quality and ergonomic curves are beyond dispute.
  3. It must allow for the precise calculation of egg cooking times in every possible configuration.

To control egg cooking to perfection

Housed in a 39 mm Picobello stainless-steel case, the Egg Master II allows the wearer, through a simple adjustment of its bidirectional bezel, to calculate the cooking time for poached, soft-boiled, medium-boiled or hard-boiled eggs. With its eggshell-coloured dial (naturally), it offers a joyful palette of primary colours, each shade dedicated to a particular preparation:

  • orange for poached,
  • blue for soft-boiled,
  • green for medium-boiled,
  • and red for hard-boiled.

Starting the timing process could hardly be simpler for once: merely wait for the yellow (egg-yolk) seconds hand to reach 12 o’clock, then align the triangular bezel marker for the desired cooking style with the minute hand. Then simply wait for it to cook. Since cooking is not (unlike watchmaking) an exact science, the rehaut features coloured markings covering the final 5 to 10 seconds of cooking time for each of the four recipes. Clear enough?
